
16 Nov Seared Albacore Tuna with Tostones

Ingredients
- Albacore Tuna 3lbs
- Lime juice – 4tbsp
Seasoning mix
- Ginger powder 1tbsp
- Garlic powder 1tbsp
- Onion powder 1tbsp
- Olive oil 2tbsp
- Fine thyme chopped finely 1tbsp
- Fresh parsley finely chopped 1tbsp
- Salt and black pepper to taste
Pan searing
- Vegetable oil 2 oz
Plantains tostones
- Half ripe plantains cut into 1-inch pieces 3lbs
- Cinnamon powder 1tbsp
- Nutmeg powder ½tbsp
- Salt and black pepper to taste
Frying of plantains
- Vegetable oil 4cups
Method
Using a large stainless-steel bowl, add fish, lime juice and water. Mix and allow to soak for 5 minutes, then rinse under running water. After washing and rinsing fish, add all ingredients for seasoning mix. Mix thoroughly and allow to marinate for 1 hour. After fish has marinated, using a large frying pan, place on stove, turn on heat. When pan is hot, add butter, and then add seasoned fish. Pan sear fish until cooked and golden brown on both sides.
Plantain tostones
Place vegetable oil for frying in medium frying pan and place on stove, turn on heat. When oil is hot, add cut plantain, and fry until golden brown. Remove from oil, using the back of a pot spoon, press down plantain until flat and put back into hot oil. When tostones are golden brown remove from heat and place in a medium size stainless- steel bowl. Add all other ingredients for tostones and toss evenly. Serve with albacore tuna.
