Ingredients
- Shrimp peeled and deveined 3lbs
- Lime juice – 4tbsp
Seasoning mix
- Pimento peppers finely chopped 3tbsp
- Garlic powder 3tbsp
- Chadon beni finely chopped 3tbsp
- Onion powder 3tbsp
- Thyme finely chopped 2tbsp
- Chive finely chopped 3tbsp
- Salt and black pepper to taste
Cooking of shrimp
- Vegetable oil 2oz
Taco filling
- Mix Lettuce
- Avocado cut into medium cubes
- Tomato cut into medium cubes
- Red onion cut into medium cubes
- Shredded cheddar cheese
- Shredded Mozzarella cheese
- Tajin
Taco shell
- Taco shell soft or hard 2 packs (Hard standing taco shell was used in this recipe)
Method
Using a large stainless-steel bowl, add shrimp, lime juice and water. Mix and allow soak for 5 minutes, then rinse under running water. After washing and rinsing shrimp, add all ingredients for seasoning mix. Mix thoroughly and allow to marinate for 15 minutes.
Using a large sauté pan, place on heat. When the sauté pan is hot, add vegetable oil and seasoned shrimp. Toss until shrimp is cooked.
Once all ingredients for filling are prepped. You can start building your own taco. Always start with lettuce as this helps to prevent any moisture from the other ingredients to make the shell soggy.
