Bangamary Fish and Chips

Serves 6, Prep Time: 2hours

Ingredients

  • Bangamary fillet 3lbs
  • Lime juice 4tbsp
  • Fries 3lbs
  • Oil for frying 1ltr

Seasoning mix

  • Pimento peppers finely chopped 3tbsp
  • Garlic powder 3tbsp
  • Chadon beni finely chopped 3tbsp
  • Onion powder 3tbsp
  • Thyme finely chopped 2tbsp
  • Chive finely chopped 3tbsp
  • Salt & black pepper to taste

  Frying

  • Flour 4cups
  • Salt 1tbsp

Batter

  • Flour 1cup
  • Egg 1
  • Salt 1tsp
  • Black pepper 1tsp
  • Cajun seasoning 1tsp
  • Garlic powder 1tsp
  • Add water until thick but pouring consistency.

 

Method

Using a large bowl add Bangamary, lime juice and water. Let soak for 15mins then rinse thoroughly in bowl under running water. After thoroughly rinsing strain out all water. Add all ingredients listed in the seasoning mix to washed Bangamary and mix for 5mins. Allow Bangamary to marinate for 1 hour.

Mix all ingredients thoroughly for batter in medium size stainless- steel bowl and set aside. Add all ingredients for frying in medium size mixing bowl and set aside.  Place oil for frying in, large frying pan and place on stove and turn on heat.  When oil is hot or reaches temperature of 325 degrees Fahrenheit. It’s ready for frying.

Fry Fries in hot oil until golden brown, dip out cooked fries using a fryer web and place on grease proof paper. Dip seasoned Bangamary in seasoned flour then dip in batter and then back into seasoned flour and place in hot oil. Fry fish until it’s golden brown and floating on oil.
