
17 Jan Grilled Swordfish on Garlic Butter String Beans

Ingredients
- Swordfish steaks 3lbs
- Lime juice 4tbsp
Seasoning mix
- Pimento peppers finely chopped 3tbsp
- Garlic powder 3tbsp
- Chadon beni finely chopped 3tbsp
- Onion powder 3tbsp
- Lime zest 4tbsp
- Black pepper 1tbsp
- Vegetable oil 4oz
- Salt to taste
Garlic string beans
- String beans or Bodi beans blanched 3lb
- Garlic finely chopped 2oz
- White onion cut into julienne 2oz
- Pimento peppers finely chopped 1oz
- Unsalted butter 2oz
- Salt and black pepper to taste
Method
Washing, marinating and grilling
Using a large stainless -steel bowl, add swordfish steaks, lime juice and water. Mix and soak for 5 minutes, then rinse under running water. After washing and rinsing swordfish steaks, add all ingredients for seasoning mix. Mix thoroughly and allow to marinate for 1 hour. Pre heat grill to 325 degrees Fahrenheit. When the grill is hot, add swordfish steaks to grill, cook on both sides for 5 minutes then remove from grill.
Garlic beans
Using a large sauté pan, place on stove and turn on heat. When pan is hot, add unsalted butter, garlic, onion and pimento. Let cook for 2 minutes. Add blanched string beans, salt and pepper. Toss it evenly and remove from heat.
