
17 Jan Lime Zest Grilled Marlin with Garlic Aioli
Serves 6, Prep Time: 2hours
Ingredients
- White Marlin steaks 3lbs
- Lime juice – 4tbsp
Seasoning mix
- Pimento peppers finely chopped 3tbsp
- Garlic powder 3tbsp
- Chadon beni finely chopped 3tbsp
- Onion powder 3tbsp
- Lime zest 4tbsp
- Vegetable oil 2oz
- Salt & black pepper to taste
Garlic Aioli
- Garlic peeled finely chopped 4oz
- Mayonnaise 8oz
- Fresh lime juice 1oz
- Salt & black pepper to taste
- Chadon beni finely chopped 2tbsp
- Red onion finely chopped 2tbsp
- Add water for desired consistency
Pickled vegetables
- Carrots cut into Julienne 6oz
- Cucumber cut into Julienne 6oz
- Tri color peppers cut into Julienne 8oz
- Fresh lime juice 4oz
- Chadon beni finely chopped 3tbsp
- Garlic finely chopped 1tbsp
- Fresh parsley finely chopped 1tbsp
- Salt & pepper to taste
Method
Seasoning and grilling White Marlin
Using a large stainless-steel bowl add white marlin, lime juice and water. Let soak for about 30mins then rinse under running water. After rinsing add ingredients in the seasoning mix. Mix thoroughly and allow to marinate for 1 hour. Using a hot grill, place white marlin steaks on the grill, cook on each side for 5minutes then remove from heat.
Pickle vegetable
Using a medium size stainless steel bowl, add all ingredients for pickle vegetables. Add salt and pepper to taste. Mix evenly, cover and allow to marinate for about one hour.
Garlic Aioli
Place all ingredients in the blender. Add desired water and blend until mixture is smooth in texture. Place in storage container, cover and put in refrigerator.
