Pan Seared Marlin on Fresh Cous Cous

Ingredients

  • Blue marlin steaks 3lbs
  • Lime juice 4tbsp

Seasoning mix

  • Pimento peppers finely chopped 4tbsp
  • Garlic chopped 3tbsp
  • Chadon beni finely chopped 3tbsp
  • Thyme finely chopped 2tbsp
  • Chive finely chopped 3tbsp
  • Salt & black pepper to taste

 Couscous

  • Water 1cup
  • Instant couscous 1cup
  • Extra-virgin Olive Oil 3oz
  • Tomato cut into small cubes 4oz
  • Cucumber seeds removed cut into small cubes 4oz
  • Red bell pepper cut into small cubes 4oz
  • Chickpeas from can drained and rinsed 4oz
  • Red onion finely chopped 2oz
  • Black olives pitted and sliced 4oz
  • Feta cheese crumble 2tbsp
  • Parsley finely chopped 1tbsp
  • Mint finely chopped 1tsp
  • Basil finely chopped 1tsp
  • Oregano dried 1tsp
  • Lemon zest 1tsp
  • Lemon Juice 1oz
  • Salt and black pepper to taste

Pan searing

  • Unsalted butter 4oz

 

Method

 Couscous

Using a medium saucepan place on heat, add water, olive oil and salt to taste. When water comes to a boil, add couscous and stir quickly. Turn off the heat and cover. Let the couscous stand until tender for 5 minutes and then fluff with a fork and let cool. After fluffing couscous, add all other ingredients and mix thoroughly. Place in serving dish, cover and set aside.

Washing, marinating and pan searing

Using a large stainless-steel bowl, add blue marlin steaks, lime juice and water. Mix and allow soak for 5 minutes, then rinse under running water. After washing and rinsing blue marlin steaks, add all ingredients for the seasoning mix. Mix thoroughly and allow to marinate for 1 hour. After the fish has marinated, use a large frying pan, place on stove and turn on heat. When pan is hot, add butter, and then add seasoned fish. Pan sear fish until cooked and golden brown on both sides.
