Poached Lobster Salad

Chef Rocke of Prime Restaurant serves a delicious Poached Lobster Salad. Lobster tails are decadently poached then tossed in a colourful, creamy dressing and arranged in a bowl of lettuce. Simple & tasty. We are using Ocean Delight 8oz Lobster Tail.

4, 8oz Lobster Tails
2 quarts Water
2 Stalks Celery
4 Sprigs Thyme
1 Small Onion Chopped
1 Head Garlic Crushed
10 each Pimento Pepper
4 Chives
1tbsp Salt


2 cups Mayo
1tbsp Mustard
4oz Celery diced
6oz Bell Peppers Diced
4oz Pimentos Diced
4oz Sliced Stuffed Olives
Salt & Pepper


  1. Fill the saucepan with water, add all lobster ingredients.
  2. Bring to a boil then simmer to release the flavour of vegetables, 20mins or more.
  3. Add lobster, bring to a boil and cook for 10-15 mins.
  4. Drain and refresh in cold water.
  5. Remove lobster meat from shell and cut into chunks.
  6. Mix poached lobster chunks together with all salad ingredients until well combined.
  7. Spoon into lettuce leaves and serve.
