Snapper with olive dressing & roasted zucchini salad

We love healthy dishes that make the abs smile. This Mediterranean flavoured dish will jazz up the table this weekend and is guilt free. Losing weight and eating healthier doesn’t have to be boring. With a little planning and thinking outside of the box, you will be surprised at the meals you can create that will have you wondering, “Wow! Did I make that?”


60g pitted Sicilian green olives
1 lemon
80ml (1/3 cup) extra virgin olive oil, plus extra, to drizzle
1/4 bunch oregano
4 (400g) zucchinis
Two bunches baby (Dutch) carrots (see note)
Two cloves garlic
Four x 180g pieces snapper fillet, pin-boned, skin on
Two cups rocket
