When purchasing your Tuna don’t forget to keep this in mind:
The flesh of the tuna can range from very light pink (nearly white) to deep reddish brown. The tuna steak may have a darker brown area, which is edible but has a much stronger flavour.
It is best to buy the tuna fillet frozen. This way, you know it will be the freshest possible because you control when to thaw it.
When selecting frozen tuna, ensure that the product has a consistent colour. There should be no rainbow sheen on the fish, and it should have a pleasant ocean-fresh smell when thawed. Just be sure to store it in the coldest part of your freezer until you are ready to thaw it.
Thaw frozen seafood gradually by placing it in the refrigerator overnight. If you have to thaw seafood quickly, either seal it in a plastic bag and immerse it in cold water or â€” if the food will be cooked immediately thereafter â€” microwave it on the â€œdefrostâ€ setting and stop the defrost cycle while the fish is still icy but pliable.
